Get to Know our Food: Arepas at Las Palmas in Wicker Park

Here at las Palmas we strive to have each of our customers get to know the modern mexican food we are creating. By using traditional recipes, ingredients, and styles in a new modern way we arrive at the dishes our customers rave over. For instance the:

CALLOS DE HACHA ~ Pan-seared scallops over a crispy arepa with creamy Poblano salsa & vegetable ragout 

One of the things that makes this such and amazing dish is the crispy arepa that is the base of the plating. An arepa is a simple bread that originated in the indigenous people of Nosthern South America's diet. Most often made of cornmeal they canbe grilled. baked, fried, or boiled depending on their use. Similar in appearance and style to a pancake they are often filled with various ingredients  depending ont he recipe and cuisine.

Here at our Wicker Park restaurant, Las Palmas, we are using arepas in the pan seared scallop recipe mentioned above. Come try it sometime!

Las Palmas Mexican Restaurant Chicago

INGREDIENT HIGHLIGHT: ACHIOTE

Being a Mexican Restaurant in Chicago we love to bring a modern spin to our traditional mexican ingredients. Mexican cuisine is full of rich flavors and colors. One of the sources for both is Achiote. 

The Achiote seed clusters seen here are a good example of the color which can be infused into food from them. Popular for centuries in Latin America it is used to in the popular Mexican spicy pork dish Cochinita Pibil, and recently it has been growing in popularity as a natural alternative to synthetic food coloring compounds outside of Mexcian Cuisine. 

Here at Las Palmas, we aim to bring original interpretaitons to our Chicago Mexican Restaurant scene, and we are using Achiote in our variation of that famous Cochinita Pibil Dish. Here it is: 

LAS PALMAS COCHINITA PIBIL
Braised pork shoulder slow roasted in banana leaves with achiote, citrus juices and Mexican herbs. Finished with a Habanero salsa.

Lemon-Lime Bay Scallops at Las Palmas Modern Mexican Restauramt

LEMON-LIME BAY SCALLOPS ~
